Since 1790, the Paraizo Resort remains under the ownership of the Mercio family, whose roots extend from Portugal, more precisely from the Island of São Jorge, in the Azores Archipelago.
Initially dedicated to livestock and agriculture, the property began the implementation of vineyards in the years 2000, along with the development of the agro-silvo-pastoril project. As of 2011, the production of Cabernet Sauvignon was directed to the creation of the winery's own brand.
The vineyard of the Paraizo Resort covers 3 hectares of the Cabernet Sauvignon variety, imported from Italy, and 2 hectares of the Shiraz variety, imported from South Africa, marking the pioneering of this variety in Brazil and being officially registered in the Ministry of Agriculture.
With the commitment to preserve the quality of the grapes and the wine, vineyards in the estate are aimed at a productivity limited to 7 tons per hectare.
The Paraizo Resort actively participates in the Proceeding Indication project of the Gaúcha Campaign, led by Embrapa, which seeks to establish a geographical indication for the fine wines produced in the region.
